Mocha Truffles

1-8oz Cream Cheese, softened
24 ounces Semi Sweet Chocolate Chips
3 Tablespoons Instant Coffee
2 Tablespoons Water
Dark Dipping Chocolate or 12oz bag Hershey’s Special Dark Chocolate

Melt the Semi Sweet Chocolate Chips in the microwave, according to instructions on the package. Mix the coffee and water together. Cream the chocolate, cream cheese and coffee together using an electric mixer. Chill in refrigerator (being careful not to chill to long). Once candy is firm enough to shape, roll into balls and place on foil lined cookie sheet(s). Place the tray in the refrigerator and chill for another one to two hours. Melt dipping chocolate over a double boiler and dip the balls. Return the tray to the refrigerator until chocolate coating is set. Refrigerate the candy in an air tight container. Makes 5 1/2 dozen.
